El Cronopio, Cabernet Sauvignon in G Major.



 These grapes come from Itata, one of the oldest valleys in Chile. This 100% dry-aged cabernet is very different from Chilean cabernets, where we expect aggressive tannins, we find soft tannins, where we expect deep red fruit and overripeness, we find balanced acidity.

 It is, without a doubt, atypical of Chilean cabernets and that is why its soundtrack is very far from what one would expect for a thick, voluminous and somewhat overripe wine.
